Serves: 4
Ingredients:
- 2 bottles Tomato & Mascarpone Sauce (or similar)
- 2 tbsp olive oil
- 2 fresh red chillies chopped
- 1 onion
- 4 pods garlic
- 1 green pepper sliced
- Handful mushrooms sliced
- Handful asparagus roughly chopped
- 2 tbsp green pesto
- 100g mozzarella chunks
- 100g mozzarella grated
- Salt to taste
- ½ tsp black pepper ground
- ½ tsp chilli flakes
- Fresh basil leaves
Method:
- Mince the onion, garlic and fresh chilli together
- In a pan, boil the pasta with some oil and salt and keep aside
- In another pan, heat the oil and saute the onion, chilli and garlic paste for 3 minutes
- Add the pesto, peppers, asparagus and mushrooms. Cover and cook for 10 minutes
- Add in the Tomato and Mascarpone sauce with salt, chilli flakes and black pepper and allow to come to a boil
- Take a baking tray and add the pasta, followed by the pasta sauce and mix together
- Cover the pasta with a thick layer of grated mozzarella and then scatter mozzarella chunks over it
- Garnish with basil leaves and fresh red chilli, then bake in the oven for 20 minutes till the cheese goes golden brown
