Kanta’s Kitchen: Arrabiatta Pasta Bake

Prep Time: 15 minutes
Cooking Time: 40 minutes
Serves: 4

Ingredients:

  • 2 bottles Tomato & Mascarpone Sauce (or similar)
  • 2 tbsp olive oil
  • 2 fresh red chillies chopped
  • 1 onion
  • 4 pods garlic
  • 1 green pepper sliced
  • Handful mushrooms sliced
  • Handful asparagus roughly chopped
  • 2 tbsp green pesto
  • 100g mozzarella chunks
  • 100g mozzarella grated
  • Salt to taste
  • ½ tsp black pepper ground
  • ½ tsp chilli flakes
  • Fresh basil leaves


Method
:

  1. Mince the onion, garlic and fresh chilli together
  2. In a pan, boil the pasta with some oil and salt and keep aside
  3. In another pan, heat the oil and saute the onion, chilli and garlic paste for 3 minutes
  4. Add the pesto, peppers, asparagus and mushrooms. Cover and cook for 10 minutes
  5. Add in the Tomato and Mascarpone sauce with salt, chilli flakes and black pepper and allow to come to a boil
  6. Take a baking tray and add the pasta, followed by the pasta sauce and mix together
  7. Cover the pasta with a thick layer of grated mozzarella and then scatter mozzarella chunks over it
  8. Garnish with basil leaves and fresh red chilli, then bake in the oven for 20 minutes till the cheese goes golden brown
