Kanta’s Kitchen: Aloo Gobi

Prep Time: 5 minutes
Cooking Time: 30 minutes
Serves: 4

Ingredients:

  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1/4 tsp hing
  • 2 fresh green chillies chopped
  • 1 inch ginger finely cut
  • 1 tbsp tomato puree
  • ½ tsp garam masala
  • ½ tsp chilli powder
  • ½ tsp turmeric powder
  • 1 large cauliflower chopped
  • 2 potatoes roughly chopped
  • Salt to taste
  • Fresh coriander chopped to garnish


Method
:

  1. In a wok, heat the oil and saute the cumin for 30 seconds with the hing
  2. Add the green chilli and ginger to cook for 1 minute
  3. Add the tomato puree, salt, garam masala, chilli powder and turmeric powder and cook for 1 minute or until the oil splutters
  4. Add in the potatoes and cauliflower, mix slightly and cover to cook
  5. Check and mix the vegetables every 5-7 minutes and leave covered to cook in the steam till tender
  6. Garnish with coriander leaves
