Ingredients:
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/4 tsp hing
- 2 fresh green chillies chopped
- 1 inch ginger finely cut
- 1 tbsp tomato puree
- ½ tsp garam masala
- ½ tsp chilli powder
- ½ tsp turmeric powder
- 1 large cauliflower chopped
- 2 potatoes roughly chopped
- Salt to taste
- Fresh coriander chopped to garnish
Method:
- In a wok, heat the oil and saute the cumin for 30 seconds with the hing
- Add the green chilli and ginger to cook for 1 minute
- Add the tomato puree, salt, garam masala, chilli powder and turmeric powder and cook for 1 minute or until the oil splutters
- Add in the potatoes and cauliflower, mix slightly and cover to cook
- Check and mix the vegetables every 5-7 minutes and leave covered to cook in the steam till tender
- Garnish with coriander leaves
