Serves: 4
Ingredients:
- 200gm paneer cubed
- 2 tbsp butter
- 1 tbsp ghee
- 1 tsp cumin seeds
- 1/4 tsp hing
- 3 fresh green chillies chopped
- 1 inch ginger finely cut
- 4 garlic pods crushed
- 1 onion finely chopped
- 1 red pepper roughly chopped
- Handful mushrooms chopped
- 8 tbsp tomato puree
- 1 tsp garam masala
- 1 tsp tandoori masala
- 2 tsp dhaniya (coriander) powder
- 1 tsp jeera (cumin) powder
- ½ tsp chilli powder
- ½ tsp turmeric powder
- Salt to taste
- ½ cup water
- ¼ cup milk
- Fresh coriander chopped to garnish
Method:
- Soak the paneer in warm water and keep aside so it remains tender
- In a wok, heat the butter and ghee, and saute the cumin for 30 seconds with the hing
- Saute the green chilli, ginger and garlic for 1 minute or until fragrant
- Add the onions and saute until golden brown
- Mix in the red peppers and mushrooms, and cook till almost tender
- Add the tomato puree, salt, garam masala, tandoori masala, dhaniya powder, jeera powder, chilli powder and turmeric powder and cook until the oil splutters
- Add in the water and milk and allow to come to a slight boil
- Now add in the paneer and cook for 3-4 minutes
- Garnish with fresh coriander leaves and an extra dollop of butter
