Serves: 4
Ingredients:
- 4-6 slices of bread (any)
- 1 cup besan (gram flour)
- 1/2 cup water
- Oil to deep fry
- 1 tsp ajwain (caraway / carom seeds)
- 2 fresh green chillies finely chopped
- 1.5 inch ginger finely chopped
- 4 garlic pods crushed
- Small handful coriander finely chopped
- 1 tsp dhaniya (coriander) powder
- 1 tsp jeera (cumin) powder
- ½ tsp chilli powder
- 1/8 tsp turmeric powder
- Salt to taste
Method:
- In a wok, pour enough oil to cover around 1.5 inches of the wok in depth and allow to heat
- Cut the bread slices in 4 square pieces or 2 triangular pieces
- In a bowl, whisk lukewarm water into the gram flour until the consistency is the same as that of creamy yoghurt
- Mix in the ajwain, green chilli, ginger, garlic, coriander, salt, chilli powder, cumin powder, turmeric powder, dhaniya powder and jeera powder
- Check that the oil is heated enough by dropping a pinch of batter into it. If it floats at the top, the oil is ready to fry
- Dip the bread slices into the batter so they are completely covered by the batter
- Drop bread slices slowly into the hot oil and till golden brown, 2-3 at a time, tossing every 30 seconds
- Remove and drain the oil on a paper towel before serving hot
